
Snowman Polenta Pizza
This is a super easy Christmas time snack for all the family.
Recipe
Base:
400ml Vegetable Stock
100g Polenta
2 tbsp grated parmesan
2 tbsp olive oil
Sauce:
2 tbsp olive oil
1 clove crushed garlic
200g passata
1 tbsp tomato paste
1 tsp sugar
1/2 tsp salt
1/2 tsp basil
1/2 tsp oregano
pinch of freshly ground black pepper
Topping:
3-4 large chestnut mushrooms
1-2 balls of mozzarella sliced 1cm thick
Whole black olives (cut the ends off for the eyes)
1 small carrot cut into tiny strips
Method:
Add the oil to a large pan and fry off the garlic for 1-2 minutes. Add the passata, tomato paste, sugar, salt, pepper, basil and oregano. Stir to combine and cook on simmer for 15 mins.
Turn on your oven to 200 fan.
In a sauce pan bring the stock to the boil then slowly add the polenta while whisking constantly. Once all the polenta is mixed in add 2 tbsp of the parmesan cheese and stir in to combine, about 3 minutes.
Grease a baking tray with oil, pour in the polenta and pat it out to about 1cm thick. If it is sticking to the spoon too much just wait 5 minutes until it is cool and you can pat with your hands to the desired thickness and leave to chill.
Once chilled use a round cookie cutter to cut out your bases. Add the sauce, mozzarella, mushrooms, carrot, black olives or whatever topping you desire to create a snowman face.
Pop them in the oven for around 10 minutes until the cheese has started to melt. Serve and enjoy!
Please note: If you are serving to young children you will want to cut it into small pieces as the cheese becomes hard as it cools.
